Yes, don’t do it. Grill your brats over indirect heat until the internal temperature is over 165 and they’ll be perfect. They should have a nice color, if you want you can put a little char on them over the fire at the end. A nice topping is grilled onions with butter, a little beer and SPG (salt, pepper, garlic powder) cooked in a cast iron pan on the grill while your brats are cooking.
